Turkish Eggs (Çılbır): The Brunch You Didn’t Know You Needed
You’ve woken up a little wonky, but don’t worry, we’ve got just the thing. This classic Turkish dish is a low effort, high reward kind of brunch. Silky poached eggs, creamy Greek yogurt, and a spicy butter drizzle that hits like a warm hug. It’s gut friendly, protein packed, and exactly what your body’s asking for (even if your head’s still negotiating).
What You’ll Need:

2 large eggs

½ cup Greek yogurt

1 tbsp butter

1 tsp paprika (sweet or smoked, your call)

A pinch of chilli flakes (optional, but recommended)

Fresh herbs (dill or parsley work best)

Salt + pepper to taste

Toasted bread or pita on the side
How to Make It:

Bring a pot of water to a low simmer and add a splash of vinegar (this keeps the eggs neat).

Crack each egg into a small bowl, then gently slip into the simmering water. Poach for 3-4 minutes, just until the whites are set and the yolks stay runny.

While that’s happening, melt butter in a small pan. Add paprika and chilli flakes, swirl for 30 seconds until fragrant.

Spread your Greek yogurt on a plate. Add a little salt + pepper to taste.

Lift the poached eggs out with a slotted spoon and place them right on top of the yogurt.

Drizzle the spiced butter over everything, sprinkle on your herbs, and dive in with toasted bread or warm pita.
